Go to the fish market and look for a fresh 2,5 to 3 LBs. Octupus.. When you get home wash it well particularly inside the bag, pull out the eye in the center,

put it back in a plastic bag and freeze it.

Next day or next week bring a pot with enough water to a steady boil get the octupus out of the bag and place it in a pot with a whole onion and some salt.

bring the boiling water to simmering, cover the pot and let it cook for a good hour. Pierce the octupus with a fork to test the doneness. If the fork goes in without any pressure its done.

Now cut the bag from the octpus and save it.

Cut the tentacles in five inche pieces place it in a shallow baking dish and broil it on high for about five minutes. Get 6 or 7 garliccloves and chop it coarsely.

Also chop a bunch of fresh and washed cilantro.

Fry the garlic in a frying pan with olive oil (9 tablespoons) when it starts to change colour turn off the burner.

Pull the octupus from the broiler and toss the olive oil on top of the octopus, plus the cilantro and some lemon juice, or a good vinegar.

Serve with a baked potato and steamed brocolli.

Enjoy.

The water from cooking the animal and its bag are great to cook with rice. Cut the bag in little pieces and toss it with the rice.
